Who’d have thought you could make a delicious vegan and gluten free chocolate mousse with just 2 ingredients!
Chickpea water (Aquafaba) is an excellent egg white alternative when it comes to baking. It amazed me how it can be whisked up to replicate egg whites.
You can use any type of chocolate for your mousse, I chose Bournville.
How to make your 2 ingredient chocolate mousse:
Step 1: Drain your chickpeas so the liquid goes into a jug. Remember to save the actual chickpeas to use for something else!
Step 2: Get your choccy bar of choice, break it up, melt it and then allow to cool.
Step 3: Pour your chickpea water into a bowl and whisk!
I’d recommend using an electric whisk as you have to do it for a while, I whisked mine for 10 minutes.
Continue to whisk until soft peaks form. You’ll know it’s ready when you tip it and it doesn’t move.
Step 5: Get your cooled melted chocolate and fold into the whisked chickpea water in stages.
Step 6: Pour your mixture equally into your dishes. Pop into the freezer for at least 2 hours to set and then store in the fridge. Garnish with your choice of toppings & enjoy!
Step 7: Enjoy scraping out the chocolatey leftovers. A compulsory task in any baking.
